Brazilian Carrot Cake
2 cups carrots, peeled
1 ½ cup sugar
1 cup vegetable oil
2 cups all-purpose flour
1 tablespoon baking powder
Preheat the oven at 350°F/180°C.
Mix all the ingredients in a blender. I like to put all the liquids first and adding the others ingredients slowly.
Blend it until it’s homogeneous.
Bake it for approximately 40 minutes.
Stick a toothpick into the middle of the cake to check if it is baked.
Cover the cake with a chocolate ganache or brigadier.
